Study design shows modest but notable changes

Scientists published the findings in the journal Nutrients. They recruited two groups of adults diagnosed with MASDD and assigned one group to consume a daily portion of raw tomatoes and tomato sauce—about one large tomato plus a few tablespoons of sauce—while the control group avoided tomatoes entirely. The intervention lasted six weeks, after which liver fat was measured using imaging techniques.

Participants who ate tomatoes showed a statistically significant reduction in liver fat compared to the control group. The difference persisted even though neither group experienced meaningful shifts in body weight or overall composition, indicating the effect was tied to the food itself rather than weight loss.

Tomatoes are a major source of lycopene, an antioxidant with anti‑inflammatory properties. Lycopene may limit the creation of new fat, accelerate the breakdown of existing fat, and reduce the influx of fat from the bloodstream into the liver. Cooking improves lycopene absorption.

Dr. Nadege Gunn, a board‑certified hepatologist, noted that the improvement “occurred without meaningful changes in body weight or overall body composition,” showing the direct role of the tomato compounds. Beyond lycopene, tomatoes contain beta‑carotene, another plant compound that can mitigate oxidative stress. Together, these nutrients may create a favorable environment for the liver to process fat more efficiently.

Incorporating both raw and cooked tomatoes into daily meals does not require drastic dietary overhaul. A simple salad topped with sliced tomatoes, alongside a modest serving of tomato‑based sauce on pasta or vegetables, can meet the study’s intake level. This approach aligns with broader dietary patterns that emphasize whole, plant‑based foods.

From a broader perspective, the research adds to a growing body of evidence that specific foods can influence organ health independent of calorie restriction. While mechanisms remain under investigation, the findings encourage clinicians to consider targeted nutrition advice as part of MASLD management, alongside exercise and weight‑control strategies.
